Will gilt head bream farmed in the Mediterranean do? It's a favourite of mine baked in foil with a decent amount of EVOO, lemon and thyme or parsley, spot of garlic, plus cherry toms for mushed in sauce really, and baby potato slices (pre softened), S&P, all wrapped up with the fish.

So, items that cook wonderfully in an envelope.

A piece of salmon tail end fillet, with mussels, clams and shavings of FENNEL and/or a splash of VERMOUTH ... for that aniseedy hint ... en papillote :yum

< What Suffs said for the follow-on domino(es), so FENNEL and/or VERMOUTH.

An aside question: Is it still en papillote if done in foil, criminal as that might be? Also, is it called something else as well (at table?) when a paper parcel is actually served to each guest to open and imbibe the aroma? (Usually the cook's delight.) Ta.

1 part vermouth, 6 parts gin (or vodka if that is your wont) plus a splash of olive brine for a dirty martini.

red wine vinegar (or any, really) in onion marmalade -

ONION MARMALADE

1.25kg onions, sliced into thin rings
3 tbsp salt
1kg preserving or granulated sugar
500ml vinegar
1 1/2tsp cloves tied in a piece of muslin
2 tsp caraway seeds

Sprinkle the onions with the salt. Mix well and leave to stand for 1 hour. Rinse and dry.
Put the sugar, vinegar and muslin bag in the preserving pan. Bring to the boil then simmer for 5 minutes. Add the onions and caraway seeds. Return to the boil, skim, reduce the heat to minimum and cook for 2 - 2 1/2 hours, or until the syrup is thick and the onion is translucent and golden brown.
Remove the pan from the heat and leave the onion to settle for a few minutes. Ladle the mixture into the sterilized jars, then seal.
The marmalade is ready to eat immediately, but improves with keeping.

If I am cooking Goulash and having it with dumplings then I add caraway seeds to the dumplings. So suet that goes into the dumplings.
