Supper the other day was a ‘traybake’ of radicchio, chorizo, onion wedges, chunks of squash, and slices of halloumi atop quartered Concorde PEARS, all drizzled with EVOO, sprinkled with chilli flakes and baked.
Eaten with crusty bread to mop up the juice. Blissful :yum

melitzanosalata

4 aubergines
1/2 red onion
1 clove garlic, crushed
125 ml olive oil (1/2 cup)
4 tablespoons lemon juice
sea salt and freshly ground pepper to taste
3 tablespoons fresh parsley, chopped

Instructions

To prepare this super easy melitzanosalata recipe (Greek aubergine dip), start by baking the aubergines in a preheated oven at 200°C. You could either bake them whole or sliced in half length-wise, depending on how much time you’ve got to bake them. If you choose to bake them whole, use a fork to make some holes on the aubergines, place on a tray and bake for about 1 hour.
For this melitzanosalata recipe you need to use only the flesh. Peel them and dice the pulp.
Place the pulp and the remaining ingredients in a large bowl and vigorously mix with a wooden spoon. (If you prefer your melitzanosalata to have a creamier texture, then add the ingredients in a blender or food processor and pulse, adding the olive oil gradually on a steady stream. Alternatively mash them using a fork). Let the melitzanosalata cool down and put in the fridge to allow the flavours to mingle.
Serve in a small bowl and garnished with a whole black olive.

like baba ganouche for those that dislike tahini.

Butter with "something" that flavours it to enhance cooked sauces etc. BBC recipes below have four flavoured butters each.

The unusual "Mint and Cider (vinegar) butter" caught my eye, so the domino is cider vinegar.

Today I started my cider vinegar with this recipe https://www.wikihow.com/Make-Apple-Cider-Vinegar using Bramley cores and peelings. So cooking apples or Bramleys
