Aubergines with EGGS and garlic in a Papeton - served warm or cold with a fresh tomato sauce. A famous dish asociated with Avignon at the time of the popes.

Capers (etc) in a stuffing for trout.

Trout rarely gets a mention methinks. No idea why that is.
