Ginger - Ooh, as a fan, where to start and when to stop.
I'll start with it as a base flavouring (one of them) for Eastern dishes with rice noodles.

Chunky chips, a fried green pepper (the long & thin sort) and a fried egg is what we were always served around 11 pm when we were allowed (never before 9 pm) to use the Medina Sidonia archives

Mango chutney (medium hot) with sprouts . I don't know why it works with green veg but it does to me.
