Apologies for going off topic, but felt this needed clearing up.
Member 461 I suspect that "recipe" comes from a US source, not something anyone would make in Argentina or Uruguay. Chimichurri is not a grilling sauce; it is served with the meat once cooked - during the cooking process, especially if it's something like a whole lamb, it is sprinkled with "salmuera" . a flavoured brine.
If anyone's interested I can post more on a separate thread

Wasabi is a form of horseradish so pairs with beef
Might be better to stick with things that aren’t characteristic of a particular dish or presentation

Ooh, pork and prunes.
In a previous life I got on very well with a colleague from the Paris office. He and his wife invited us over for the weekend and they served pork with prunes
Delicious.
Every time I went to Paris I had to deliver cheese and onion plus salt and vinegar crisps for his Dutch wife, and blue Stilton for him
He delighted in serving Stilton to his foodie French friends and asking them to name the cheese.
