softened, minced apricots as a filling baked in four square crunch. 4 oz each of butter, sugar, oats and wholemeal flour.
you can put anything between the two layers - dates are great as are figs (stewed with a little water to soften), mincemeat is good, too.

Herrings coated with pinhead oats, we had them for lunch today, memories of Mum doing them when I was younger - thankfully I like them now.....

definitely currants, which are also used in another cornish baked goodie - 'heavy' (hevva) cake - which also contains lemon peel.
