Re: What's everyone eating this week?
Hi Member 461
Poldark country is the county of Cornwall, in the far south west of England. 'Poldark Country' refers to a TV period drama that that is set in the Cornish tin mining community. It may be a novel as well. The original series was on the TV in the early Seventies, but has recently been remade with great success. If you look at a map of the UK, imagining it as a person sitting down on the ground. Cornwall is the area just below the knee to the toes.
The area is a mixture of rural and quaint towns, with a lot of coastal areas. It wouldn;t surprise me if Gill spends some time in St Ives, which is a very arty place, and has a Tate Gallery down there, as well as other smaller, and local galleries.
I hope this clarifies things!
Gillthepainter - will you be doing some painting down there?

Lucky you Gil. I live in Devon so have often been down the road to Cornwall. It’s a beautiful area of the country , just don’t mention scones!
Sakkarin , I was distinctly underwhelmed by the almond butter . I don’t know if it’s a product that’s become more popular due to the clean eating wave , rather than actual taste

How about these seasoned tempura onion rings? I rather fancy them myself
https://www.ibreatheimhungry.com/low-carb-onion-rings/
I saw a Youtube guy recently who swore by coating rings in plain flour, then placing singly on a tray and into the fridge for an hour. Thereby flour goes a bit gluey making the batter stay stuck. Then into batter, then hot oil. (in the above recipe, you'd skip the egg-dip stage but add sparking water to make a batter once the hour's up.)
NB: His handy tip: Use a disposable wooden skewer to pick up rings, dip in batter and flip over in the oil. Easy to wipe clean, so much better than a progressively gunked up fork or tongs
The flour with Indian spices should work for onion bhaji too being gluten-free, to use up the onion's centre.

Re: What's everyone eating this week?
stricters, yes, I'll be painting. And my husband will be doing a second sea-swim.
Polkerris to Charleston, across the bay.
I might do a day course at St Ives.
Member 461, St Ives is a concha-shaped bay right at the tip of England. https://youtu.be/dksyH4JmfKE
Pasta tonight, with a problem.
Tony wants no tomato, no cream, no oil. I'd better get my Pasta books out for inspiration. I'm a bit stuck.

I made this pasta for tea recently, with bought pesto , and we really enjoyed it https://www.veganricha.com/2015/12/zesty-pesto-pasta-with-rainbow-chard.html
Not oil free as such as there is some in the pesto, but it didn’t taste oily.

Smitch.
Thank you. That's what we shall have. I'll put my cookbooks back on the overstuffed shelf.

Re: What's everyone eating this week?
I'm ( supposed ) to be working from home today! I've just cooked a big pot of black beans, some of which will turn into a spicy mango salsa to go along with roast chicken legs & salad tonight - the rest will sit in the fridge until inspiration dawns - I quite fancy refried beans
Re: What's everyone eating this week?
I have leftover chicken, so I could make a nectarine salsa to go with it and salad.
Gill, you mentioned how much you like golden beetroots and I've just bought some. How do you cook them and what do you have them with?

Re: What's everyone eating this week?
Unlike red chunks, Renee.
I like golden beetroot warm, cut into slender rounds. And in salads with a simple dressing - that's what I got my apple cider vinegar for last year.
I prefer beetroot boiled rather than roasted.
Well done on your find. I haven't seen any yet.
Juiced with apple too, as a drink is lovely.
Black bean salad. How lovely, Lush.

Re: What's everyone eating this week?
Thanks Gill and it's interesting that you prefer them boiled rather than roasted. I also bought a few red beetroot, so I will be able to make Member 461's recipe.

Re: What's everyone eating this week?
Renée,
A black bean salad with its Latin flair sounds lovely.
I had a black bean salad at a lovely Cuban Restaurant downtown Madrid last winter ..
I recall it had:
Black beans
Papaya
red onion
lime juice
a bit of minced Cilantro leaves
Mango
Orange slices
A bit of minced mint leaves
It was truly nice ..

Re: What's everyone eating this week?
Gil, The Painter,
Thank you very much for the Video Link on St. Ives .. Truly exceptionally extraordinary ..
Yes, I had seen a remarkably outstanding film that was produced years ago on The Cornish Coast ..
It was about a group of sailors who were caught in a storm and landed on the coast of this región of England ..
If I recall, a few survived and were helped by the locals .. It had typical romantic interlude too ..
Sorry, the title was in Spanish, so the name of the film in English could be quite different ..

Re: What's everyone eating this week?
I'm not usually around in the evening.
Member 461, you might recognise the tablecloth from the Tossa de Mar market every thursday
Smitch.
Thank you so much.
No walnuts in, which is odd, we've always got walnuts in. But I used pinenuts for the pesto bit.
Can't get husband to want to eat courgettes, so I just used mushrooms.
Really, really lovely.
Just my sort of vegetable pasta.

Re: What's everyone eating this week?
Glad you enjoyed it! We thought it made a nice change from the usual tomato based sauces. Since I had gallbladder problems, I tend to avoid creamy or rich sauces too.

Re: What's everyone eating this week?
It does all of that, Smitch.
It was a real change.
As my husband is in the height of his training now for one week, tomato, cream and overly oily and rich foods make him feel ill in the water early morning.
But he requires pasta 3 times a week.
Tomorrow at 6am, he will be swimming 9 kilometres in the lake at Cirencester.
Let's see if it has provided the proper fuel release he needs. I'm sure it has.
I hope your gallbladder is better.
